Bellows House Bakery is Now Certified Kosher
February 18, 2004--Bellows House Bakery in North Walpole, has been certified as a kosher dairy bakery. The Kosherization process took place on February 9, under the supervision of two Rabbis, representing the Orthodox Union, headquartered in New York, NY.
The Jewish religion incorporates a regimen of dietary laws. These laws determine which food is acceptable and in conformity with Jewish Law. The word kosher is an adaptation of the Hebrew word meaning fit or proper. It refers to foodstuffs that meet the dietary requirements of Jewish Law.
The barometer of kosher and non-kosher depends on two variables: the source of the ingredients and the status of the production equipment. Kosher certification, which is the guarantee that the food meets kosher requirements, revolves around these two criteria.
The Kosherization process required rigorous bakery cleaning, disassembly and cleansing of the bakery’s ovens, professional steam cleaning of all cooling racks and the de-carbonizing and baking of every sheet pan at 500 degrees, for a period of one hour. Extensive record-keeping and inventory control are a large part of maintaining kosher certification. All incoming ingredients have strict content and package marking requirements. Re-certification is required annually and the bakery is subject to unscheduled rabbinical inspections on a monthly basis.
The certification allows Bellows House to display the OU-D symbol on all of its product labels. Use of this symbol represents a product of high quality and purity to the general marketplace, not only to those of the Jewish faith. Bellows House also manufactures an extensive array of private label products. Each private label product may also display this symbol, via separate agreements, if Bellows House is the sole manufacturer of the item.
